Manuel was born in Piove di Sacco in 1985, near Venice, and he started moving his first steps into the service world at the young age of 15 in a very popular traditional restaurant.
At the age of 19 he knocked the door of Lionello Cera and straight away he started working in the two Michelin stars Antica Osteria da Cera in Lughetto di Campagna Lupia. Soon after he joined they offered him the possibility of studying sommelierie and as the youngest of the class he also received the best marks.
He understood that this was just the beginning of his career. Manuel worked at Antica Osteria da Cera for 7 years, learning the Art of Hospitality and strengthening his character and confidence in a GREAT family run restaurant. He then moved to Venice and started working at il Ridotto when they were awarded with 1 Michelin star.
At this stage Manuel felt the need of gaining an international experience and at the age of 29 he moved to London, starting his career again from the bottom. It took 6 months before he learnt some English and joined a team of 9 sommeliers at the prestigious Dinner By Heston Blumenthal, two Michelin Stars and ranked on top of the San Pellegrino 50 Best.
Here he had access to one of the finest wine cellars and the opportunity to taste and learn about wine from all over the world.
After 4 years in London, Manuel decided to go back to Venice and join Local as Maitre Sommelier.
